9. Turn heat to high and watch for steam.
10. When the steam stream is steady (say that five times fast) add the appropriate amount of weight. This is probably a good point to remind you folks at home to read your pressure cooker manual. (If you are doing this with someone who has experience, then feel free to slack. Otherwise, no excuses. Safety first.)
